Strawberry Cheese -- Add toasted poppy seeds and finely-chopped strawberries to mascarpone and garnish with thyme. Serve with crudities, little toasts or stuff large strawberries. Strawberry Salad Ideas -- Toss sliced berries with finely grated coconut, watercress, minced scallions, apple cider vinegar and walnut oil. -- Toss with toasted sesame seeds, arugula, orange juice, grated orangepeel, splash of olive oil -- Toss with tangerine sections, raw cashews, blueberries, white grape juice, raspberry vinegar and serve on curly lettuce -- Toss chopped strawberries and spinach with olive oil and strawberry vinegar -- Serve whole with red onion slices, and watercress tossed with apple cider vinegar, celery seeds and dash of dried mustard -- Serve sliced with steamed shrimp and chives, drizzled with strawberry vinegar -- Whole with pink grapefruit sections and romaine lettuce tossed with champagne vinegar -- Sliced with red seedless grapes and shredded cooked chicken with tarragon and mayonnaise -- Sliced with steamed snow peas or raw snap peas and shrimp. Dress with a sauce of puree frozen raspberries, olive oil, white wine vinegar, lemon juice, pepper and nutmeg. Add chopped red onions, chopped nuts or sesame seeds. Strawberry Mayonnaise -- Blend one egg, dry mustard, white pepper, lemon juice. Slowly add a cup of safflower oil. Cover and chill. Before serving stir in strawberries. Use over fruit, poultry, fish or shellfish salads. Strawberry and Ginger Vinegar -- Toss two cups of halved strawberries, a few slices ginger root and a bay leaf into a glass jar. Heat 2 1/2 cups white wine vinegar and add to jar. Leave it unrefrigerated overnight, than drain vinegar and refrigerate. Use in salad dressings, marinades, sauces or sparkling water. Strawberry Marinade -- Boil together quartered strawberries, vinegar(above), a few allspice berries, whole cloves, black peppercorns and olive oil. Great with swordfish, salmon, chicken, pork. Strawberry Glaze with Roast Veal -- Boil together honey, water and lime peel for about 10 minutes; add ginger, nutmeg and sliced strawberries for a few more minutes. Cool and puree in blender or food processor. Reheat until clear. Glaze peppered meat before roasting and brush with glaze frequently. Add garlic, shallots and thyme to roasting pan. Strawberry Shish Kebob -- Serve on skewers with cooked chicken or fish chunks or tossed with balsamic vinegar, ground cinnamon or lime juice and rind. Strawberry Shortbread Pizza -- Make a shortbread dough and bake in pizza pan. Cool and top with blended cream cheese, honey and vanilla extract; arrange sliced strawberries on top. Strawberry-Orange Tarts -- Make custard using honey rather than sugar; when cooled slightly, add 1/2 cup orange juice and orange extract for flavor. Chill. Spoon into individual tart shells or whole pie and top with sliced strawberries. Strawberries in Honey Rum Sauce -- Toss thinly-sliced strawberries (and blueberries if desired) with lime juice. Heat honey, dark rum and unsalted butter until butter melts; cool and mix with berries. Great with ice cream or lemon sherbet. Strawberry Bread Pudding -- Heat strawberries (and, if available, raspberries, blackberries and currents), sugar, kirsch and Scotch-based liqueur (Drambuie) in pan until sugar dissolves. Turn it into a bread-lined bowl and cover completely with more bread slices. Weight down the top of the pudding and chill overnight. Serve with whipped cream. Alternatively, soak the bread in eggs and milk, add the strawberry mixture and bake until it puffs -- for a hot dessert. Strawberry Soup with Tofu -- Blend a couple of cups of berries, vanilla extract, some strawberry jam, half cup frozen apple juice concentrate, one cake silken tofu and two cups soy milk. Add more vanilla to taste Strawberry Soufflé -- Blend honey, lemon juice and berries (any kind) until smooth. Reserve small amount of mix for garnish and fold rest into whipped cream; top with puree and whole berry. |
