Banana Bread
-- Mash 3 ripe banana and mix with one egg, a cup of sugar and 4 Tbs. butter, melted. Mix 1 1/2 cups flour, 1 t sp. salt, 1 t sp. baking soda. Combine wet and dry groups. Dust with nutmeg and sugar and bake one hour at 325.

Bran Muffins
-- Mix 1 cup bran with 2 cups flour, 2 Tbs. sugar and 3 Tbs. baking powder,a little salt. and a cup of raisins. Mix a cup of buttermilk, 2 eggs and 3 Tbs. shortening and add to dry ingredients. Bake at 350 for about 20 minutes. Grease tins well.

Cinnamon Flip
-- Cream a heaping cup of sugar with a rounded spoon of shortening; add a cup of milk, one egg, 2 tsp. baking powder and 1 1/2 cups flour. Pour into a greased pan, dust with flour and dot generously with butter, sugar and cinnamon. Bake at 350 for 40 minutes.

Cranberry Orange Bread
-- Combine 1/2 cup orange juice, 2 Tsp. oil, orange zest, hot water to make a total 3/4 cup liquid. Mix 2 cups whole wheat flour, 1/2 t sp. baking soda, 1/2 tsp. salt. Combine wet and dry ingredients, then add 1/2 cup honey, 1 egg, 1 cup chopped cranberries and 1/2 cup chopped nuts. Bake one hour at 325.

Crisp Corn Sticks
-- Add 1/4 tsp. salt and 1/4 tsp. soda to a cup of corn meal and mix in 1/4 cup oil. Stir in a cup of buttermilk and 2 Tbs. white corn syrup. Pour into greased corn stick pans or muffin tins and bake at 400 for 30 minutes.

Orange Pineapple Muffins
-- Combine 5 Tbs. honey with 1 1/2 cups milk, 1 cup crushed pineapple, 1/2 tsp. orange extract and 1 tsp. vanilla. Combine 2 cups whole wheat flour , 1 cup bran, 1/2 tsp. baking soda, cinnamon, nutmeg and allspice. Mix wet and dry ingredients, then add 3/4 cup orange juice. Bake at 375 for 12-15 minutes.

Pumpkin Bread
-- Mix 4 eggs, 3/4 cup sugar, 1/2 cup applesauce, 1/2 cup oil and 2 cups mashed pumpkin. Mix 3 1/2 cups flour, 2 t sp. baking soda, 2 tsp. cinnamon, 1 t sp. nutmeg. Combine and bake in loaf pans at 325 for 45-60 minutes.

Rice or Hominy Muffins
-- Add a cup of milk to a cup of cooked hominy or rice. Sift a cup of flour with 4 Tbs. baking powder and a little salt. Stir in 2 well-beaten eggs and bake for half an hour at 375.

Short'nin' Bread
-- Cream 1/4 cup brown sugar with 1/4 cup soft butter. Add 1 1/2 cups flour, mix and roll out to 1/2 thick on a floured board. Cut with a biscuit cutter and bake in a greased pan at 350 for about 20 minutes.

Spoon Bread
-- Mix a cup of corn meal with 1 tsp. salt and a heaping tsp. baking powder. Add a couple of beaten eggs, 2 cups milk, 2 Tbs. melted butter and enough boiling water to make a thin batter. Bake in a greased pan at 375 for about 35 minutes.

Zucchini Bread
-- Mix 3 eggs, 2 cups grated zucchini and a cup of vegetable oil. Mix 3 cup flour, 1 cup chopped walnuts, 2 cups sugar, 1 tsp. baking soda, salt, 1 tsp. cinnamon, 1/2 tsp. baking powder. Combine all and add 2 tsp. vanilla. bake in greased loaf pans at 325 for an hour and 15 minutes.
