Celery

Braised Celery -- Cook celery chunks in a covered pan with butter, a little chicken broth, salt and pepper.

Celery and Pine Nuts -- Add toasted pine nuts to cut celery that has been cooked in butter with chopped onion.

Celery and Cream , -- Toss cooked celery with a little heavy cream and butter. Optional -- Match the celery with cooked peas.

Celery Leaves and Onion -- Cook celery leaves, thin sliced onions and butter in enough water to cover until onions are just tender. Dump into a hot frying pan and cook away the liquid.

Celery Puree ----- Combine cooked celery, cooked potato, a few celery leaves with heavy cream, salt and pepper and process until smooth. Thin with chicken broth if you wish to make a soup.

Celery Slaw -- Combine thin sliced celery, grated carrots and diced apple with mayonnaise, sugar, salt and vinegar. Optional -- coarsely chopped walnuts.

Celery with Tomatoes -- Cook sliced celery in a sauce made of chopped onion sautéed in butter to which Tabasco, salt, sugar, thyme and the liquid from a can of tomatoes have been added. When the celery is tender, add the drained tomatoes and bring up to heat.

Creamed Celery -- Boil cut celery until tender in just enough water to cover. Make a sauce of heavy cream and some of the cooking water thickened with cornstarch or butter and flour. Stir in the celery.

Creamed Celery with Cream Cheese and Herbs -- Make creamed celery as above, but with milk. Add cream cheese, chives, basil and parsley and when the cheese has melted, add the cooked celery.

Mashed Celery and Tomatoes -- Cooked slice celery roots and fresh tomatoes in water with butter. When tender, drain liquid if there is excess, mash and serve.

Sweet and Sour Celery - - Add cooked celery and sour cream to a white sauce seasoned with a little vinegar and sugar.

Sweet Sour Celery II -- Top cooked celery sticks with a sauce made by boiling vinegar with sugar and butter. Bake briefly in a hot oven.

Swiss Celery -- Top cooked celery sticks with grated Swiss cheese and bake until cheese melts.

Tarragon Celery -- Combine cut celery with tarragon, butter, heavy cream and white wine. Bake at 325 for 45 minutes.
