AVOCADO AND CANTALOUPE -- Fill cantaloupe halves with mixture of diced avocado, cucumbers and, if desired, strawberries that have marinated in lemon juice, oil, sugar and salt.
AVOCADO SALAD --Combine tomato and avocado slices, shrimp, blue cheese and lettuce with a vinaighrette dressing.
AVOCADO SANDWICH -- Tomato and avocado slices sprinkled with lemon juice on toasted whole wheat bread.
AVOCADO DRESSING -- Combine avocado, lemon juice, minced onion, red pepper, mayonnaise or sour cream and dill. Or, blend avocado, orange juice, lemon juice and zest, mayonnaise and honey for a fruit dressing that's good with sliced tomatoes, sprouts and lettuce or fruit salads.
AVOCADO OMELETS -- Fill omelets with mixture of chopped avocado, chopped red onion, lemon juice and mayonnaise. Serve with salsa and sour cream.
AVOCADO AND ORANGE SALAD -- Combine orange segments and cubes of avocado, toss with Boston or butter lettuce and dress with a mixture of apple cider vinegar, orange juice and peanut oil with dry mustard, minced onion and poppy seeds.
AVOCADO AND RED ONION SALAD -- Layer avocado and red onion slices and top with dressing made with lime juice, olive oil, white wine vinegar, Dijon mustard and garlic. Garnish with watercress sprigs
AVOCADO AND RED PEPPER SALAD -- Combine thin slices of avocado and red bell peppers and coat with a dressing made by mixing ricotta cheese, olive oil and red wine vinegar. Garnish with parsley and chill.
AVOCADO SALSA -- Combine mashed avocados, chopped onions, garlic and tomatoes with lemon juice and oil. Season with cayenne, coriander and Tabasco. Good with chips or as a vegetable dip.
AVOCADO AND SCALLIONS -- Top avocado slices with dressing made with lime juice, olive oil, minced coriander or parsley and lots of scallions
CREAMY AVOCADO SOUP -- Make a roux then add chicken or vegetable broth (potato peel broth is very good) and simmer until thick and smooth. Stir in avocados that have been pureed with light cream, plain yogurt and lemon juice. Add a bit of sugar and season. Serve hot with tortilla chips and sauce. (Soup does not keep well; serve fresh.)
CURRIED AVOCADO SOUP -- Blend avocado with some chicken or vegetable stock, stir in more stock, heavy cream, curry powder and seasonings. Served chilled garnished with avocado slices that have been sprinkled with lemon juice.
AVOCADO AND TOMATO SOUP -- Combine cooked corn kernels, cubed and seeded cucumber, cubed avocado, minced garlic, cumin, dried red pepper, fresh lime or lemon juice and lots of tomato juice. Serve chilled garnished with cilantro.
STUFFED AVOCADO -- Fill avocado halves with fresh gazpacho or favorite salad filling (chicken, ham, potato, shrimp, tuna, etc.). Serve with tortilla chips.
AVOCADO TACOS -- Fill favorite shells with avocado slices, top with mayonnaise or mustard, add layer of sprouts, salsa and sour cream, if desired. Alternatively, mash avocado with garlic, onions and a bit of lemon juice and garnish with cheese, sour cream and salsa.
BASIC GUACAMOLE
-- Mash ripe avocado with lemon juice, chopped onions, chopped fresh cilantro and chopped tomatoes. Add chopped green chilis if desired.
